This is a famous dish of Southern Region. Select the fresh snakefish with the weight of 500 - 600 gram/fish to grill. The fish must be grilled evenly to be delicious. After removing all intestines, use a small bamboo stick to thrust from the head to the tail and then driven the stick into the ground. Burn the fish with straw for 5 minutes. The fish is served with girdle cakes, rice vermicelli, fresh vegetables, banana and cucumber, etc. The sauce for this dish is also very simple, it is only salt mixed with chili and pepper or fish sauce mixed with chopped star fruit, lemon juice, sugar and chili.
