Fried glutinous rice is a dish requiring high processing techniques from selecting glutinous rice, steaming rice, mixing with garlic and cool. Especially, the cook must be strong and quick enough. When frying, the cook must turn the cake continuously in the big pan with boiling cooking oil. The eyes must be concentrated to make the cake as round as a ball. The fried glutinous rice is normally served with roast chicken or grilled chicken. This is a dish of high "cooking art".
